Day 6 of 50-day Paleo Challenge: The flu and Paleo
As flu season looms over us, rest assured that your immune system will be stronger from the Paleo diet and you will find yourself catching less colds.  However, if you happen to get sick during the 50-day Challenge, or you want to remain Paleo during a cold, consider these thoughts (please note that these are my personal ways of dealing with colds and/or flu): drink lots and lots of hot green tea with a hint of lemon, eat tons of oranges, and get lots of sleep.  Below is a simple, but awesome Chicken soup recipe! Yes, its Paleo, because who doesn't like a bowl of chicken soup when you're under the weather!

Chicken Vegetable Soup:
  • 6 cup water
  • meat of 1 whole chicken diced
  • 2 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 bay leaf
  • 1 tsp. black pepper
  • 6 fresh tomatoes, diced
  • 2 small zucchini, sliced thin
  • 3 carrots, diced
In a large pot, combine water, chicken, garlic, onion, bay leaf, and pepper. Bring to a boil. Reduce heat, cover, and simmer for about 2 hours or until chicken is tender. Remove bay leaf and discard. Add remaining ingredients and bring to a boil. Reduce heat and cover. Simmer for about 20 minutes or until vegetables are tender. Serves about 6.

  1. Gymnastics Certification was great! I learned a lot and will definitely have more to bring to the CF808 table!

I like Elyse's approach to the cold, eat enough and your immune system should be great!
